Enjoy this satisfying and sexy winter warming meal
2 fillets wild caught fresh salmon
1 large sweet potato, peeled if you like. I prefer
2 tbsp coconut oil
Dried herbs of your choice
Lemon wedges, to serve
Preheat your oven to 180 C. Cut the sweet potato into chunky wedges, coat in coconut oil and dried herbs, pop in a baking tray and into the oven for 30-40min or until golden brown.
When the chips are almost done, heat a frying pan over high heat and melt a little coconut oil.
Pan fry the salmon for 5 minutes on each side, or until cooked through. Dish up with lemon
wedges and enjoy!
